Ingredients
  1. Mod Meals and Massey Creek Lamb Chili
  2. 3 LBS. MASSEY CREEK GROUND LAMB
  3. 4 CUPS ONION, CHOPPED
  4. 3-4 TBS. OLIVE OIL
  5. 1 LARGE SPRIG ROSEMARY
  6. 1 BAY LEAF
  7. 4 TSP. GARLIC, MINCED
  8. 2 TSP. JALAPENO, MINCED
  9. 1 to 1 1/2 Tablespoons GROUND ANCHO CHILIS
  10. 1 Tablespoon COCOA POWDER
  11. 2 TSP. GROUND CUMIN
  12. 2 TSP. DRIED OREGANO
  13. 3/4 TSP. CINNAMON
  14. 1/4 TSP. CAYENNE POWDER
  15. 2 TSP. SALT, taste for seasoning
  16. 1 CAN, 28 OZ., PETITE DICED TOMATOES
  17. 15 OZ. TOMATO SAUCE
  18. 4 TBS. TOMATO PASTE
  19. 2 15 OZ CAN RED KIDNEY BEANS (do NOT drain)
  20. 1 BOTTLE AMBER BEER
  21. Yogurt Feta Topping with Orange Mint Gremolata
  22. 1 cup crumbled FETA CHEESE
  23. 2 cups GREEK YOGURT
  24. 6 FRESH MINT LEAVES
  25. 4 SCALLIONS
  26. ZEST OF 1 ORANGE
  27. ½ TSP. KOSHER SALT
Instructions
  1. In a large heavy bottomed dutch oven, sauté onion until translucent.
  2. Add lamb, rosemary, bay leaf, garlic and jalapeno.
  3. Cook and stir until lamb is broken into pieces and cooked through.
  4. Add the spices and salt.
  5. Stir and cook, coating well.
  6. Add tomatoes, tomato sauce, tomato paste, beer and kidney beans.
  7. Simmer for 20 minutes.
  8. Serve topped with Yogurt Feta Topping and Orange Mint Gremolata.
  9. Topping: Crumble feta into yogurt then using a hand mixer or immersion blender, blend until smooth.
  10. Set aside.
  11. Slice scallions into thin slices.
  12. Place mint leaves on cutting board over scallions, zest orange overall.
  13. Add salt and then using your chef’s knife, mince until fine.
  14. To Serve: Spoon hot chili into bowls.
  15. Top with yogurt mixture then orange mint gremolata.
