Ingredients
  1. 1 Tablespoon olive oil
  2. 1 Medium onion, diced (about 1 1/2 cups)
  3. 2 Stalks celery, diced (about 1/2 cup)
  4. 3 Medium poblano peppers (about 4 ounces each), seeded and white ribs removed, finely diced (about 1 1/2 cups)
  5. 1 Clove Cornerstone Farm garlic, minced
  6. 1 Teaspoon ground cumin
  7. 0.5 Teaspoon ground coriander
  8. 0.25 Teaspoon cayenne pepper, more to taste
  9. 1 Pound Massey Creek Farms ground turkey
  10. 2 (15.5-ounce) cans navy beans, drained and rinsed
  11. 4 Cups Massey Creek Farms/Small Potatoes Catering homemade chicken broth
  12. 0.75 Teaspoon dried oregano
  13. .25 Teaspoon Tea Huggers Lapsang Souchong Chinese tea
  14. 1 (15.5-ounce) can hominy, drained and rinsed
  15. 6 12 ounce bottles Natty Greene's Buckshot Amber
  16. .25 Cup Homeland Creamery unsalted butter
  17. 1 Tablespoon Old Mill of Guilford white cornmeal to thicken
  18. 0.5 Teaspoon salt, to taste
  19. 0.25 Cup Snow Creek Organics yogurt
  20. 2 Tablespoons chopped fresh Smith Farm cilantro leaves
  21. 1 Lime
Instructions
  1. Heat the oil in large pot or Dutch oven over moderate heat.
  2. Add the garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds.
  3. Drink one bottle of Buckshot.
  4. Add the ground turkey and cook, breaking up the meat with a spoon, until the meat is no longer pink about 2 minutes.
  5. Add the white beans, broth and oregano. Cook, partially covered, stirring occasionally, for 25 minutes.
  6. Drink second bottle Buckshot pour third bottle in pot.
  7. Add the tea,hominy, butter, cornmeal, salt and more cayenne pepper, to taste, and continue cooking, partially covered, 10 minutes longer.
  8. Mix yogurt, zest of lime, juice of lime and cilantro for topping.
  9. Ladle into individual bowls and top each serving with 1 tablespoon of yogurt mixture.
  10. Serve with remaining Buckshot plus any beer brought by those with whom you are sharing chili.
Notes
  1. Best if prepared a day ahead for the perfect melding of flavors, shared with friends and accompanied by a nice local beverage.
